Beetroot Falafel and Cauliflower Fritters with Cashew Cream | Stu Henshall | The Alternative Kitchen

Beet-balls and Cauliflower Nuggets with Cashew Cheese and Spicy Pepper Sauce

What an amazing day. Got to be a part of my mate (and crack crew’s) first festival in my home town. Great music, great vibes, and a killer outdoor kitchen that I got to demo on. If you were there, thank you for coming. I really wasn’t expecting a packed tent so I am well made up.

Decided to go plant based on this one and I am going to use the word… vegan. Don’t glaze over. I have been writing more dairy and meat free recipes not just for those who choose it as a diet but anyone that either is wanting to curb their consumption of animal products a bit or have mates that are. I hate that thing that when a veggie or vegan goes to an omnivores house for dinner they end up with just extra veg or some dry ass freezer jobbie that’s chucked in the oven. Basically an after thought. This and my Ramen recipe are pretty cool because everyone eats the same and I guarantee that no one will make the jibe, “Be great with some bacon.”

Not being preachy honest! I don’t have loads of cash and a modicum of ethnics so just choose to only have dairy or meat infrequently and just save up some of the money I would have spent on getting the best organic British meat I can find.

Anyway, check it out! I think it is the tits plus it’s got one of my favourite ingredients, BEETROOT! Here’s my Beet-balls and Cauliflower Nuggets with Cashew Cheese and Spicy Pepper Sauce.

Happy eating!
